Ingredients

  • Tomato Sauce:
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 28 ounce can of crushed tomatoes
  • 3 garlic cloves, minced
  • 3 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • salt and pepper, to taste
  • Filling:
  • 10 ounce package of frozen spinach, thawed
  • 15 ounces ricotta cheese
  • 2 and ½ cups mozzarella cheese, shredded
  • ⅔ cup parmesan cheese, shredded
  • 1 large egg
  • Noodles:
  • 12 lasagna noodles

Instructions

  1. Tomato Sauce:
  2. Heat the olive oil over medium-heat in a medium sauce pan, add in the diced onions and saute until the onions are translucent. Stir in the crushed tomatoes, minced garlic, dried basil, dried oregano, and dried parsley. Cover with a lid and allow the sauce to simmer for at least 20 minutes over low-to-medium heat.
  3. While the tomato sauce is simmering, prepare your lasagna noodles according on the directions on the back of the package. Once they are done, drain the water and allow the noodles to cool to touch. Preheat oven to 375 degrees.
  4. Filling:
  5. Prepare your filling by mixing together the spinach, ricotta cheese, 1 and ½ cups mozzarella cheese, parmesan cheese, and egg. Set aside.
  6. Once the noodles have cooled to touch, lay the noodles down on parchment or wax paper on a smooth surface. See photos below.
  7. Assemble:
  8. Spread ¼ cup of the cheese filling evenly along length of the noodles. Roll the noodles to the opposite end. Pour 1 cup of tomato sauce into the bottom of a 9 x 13 baking dish. Place the lasagna roll-ups into the baking dish, add remaining tomato sauce on top of each roll-up. Place the remaining 1 cup of mozzarella cheese on top. Bake for 25 minutes, or until cooked through.

Ingredients

  • 4 boneless skinless chicken breasts
  • ½ cup half-and-half -OR- light cream
  • 1 - 1½ cups Italian flavor bread crumbs
  • 2 tbs olive oil (divided)
  • Sauce:
  • 2 tbs butter
  • 2 tbs finely minced garlic
  • 2 tbs flour
  • ½ cup chicken stock
  • 1 cup cream (heavy cream preferred)
  • ¼ cup grated Parmesan cheese
  • 2 oz softened cream cheese
  • 1 tsp salt
  • ¼ tsp white pepper

Instructions

  1. Using a meat mallet (smooth side), pound each breast between sheets of plastic wrap or wax paper to ¼-inch thickness. This will give you a pretty large piece of chicken, so what I do is cut each pounded-down breast in half lengthwise.
  2. Heat a large skillet over medium heat; add 1 tbs of the olive oil.
  3. Dip each piece of chicken in the cream, letting excess cream drip off, then dredge in the Italian bread crumbs. You will probably have to cook the chicken in 2 batches.
  4. Place chicken in hot skillet, browning well on each side, about 5 minutes each side, until chicken tests done (175 degrees F or juices run clear when you cut.
  5. Add remaining 1 tbs of oil and repeat browning with remaining chicken.
  6. Place chicken on a platter, cover and keep warm in a 200 degree F oven.
  7. Wipe out the skillet, if desired.
  8. Melt the butter over medium heat and add the garlic.
  9. Cook garlic until it becomes fragrant--about 3-5 minutes--don't let it brown!
  10. Add the flour and blend it well into the butter/garlic. Let this cook about 1 minute.
  11. Slowly add the chicken stock stirring constantly until there are no lumps.
  12. Slowly blend in the cream then add the salt and pepper. Cook for about 5 minutes.
  13. Add the Parmesan and cream cheese and stir until the cream cheese melts and blends into the sauce.
  14. Pour sauce over chicken and serve immediately.
  15. Serves 4 hearty appetites, 8 light appetites

  • 2 pkg crescent rolls (8 count)
  • 1 pound roast beef (deli/ thinly sliced)
  • 4 ounces Swiss cheese slices (or provolone)
  • Au Jus
  • 14 oz beef broth
  • 1 dash black pepper
  • 1 sprinkle garlic powder
  • 1 tsp corn starch


Instructions

    • Unroll crescents onto a large cookie sheet.
    • On each crescent place a slice of roast beef and a piece of cheese.
    • Roll crescents starting from the wide end and ending at the narrow end.
    • Bake at 375 degrees for 13-15 minutes, until crescents are a golden color.
    • Serve with Au Jus and enjoy!

    Au jus

    • Heat all of the ingredients in a small sauce pan over medium high heat whisking well. Bring to a boil and then remove from heat. Serve with crescents and enjoy.

  • Oreo Crust:
  • 36 Oreo cookies
  • ½ unsalted butter-melted
  • Cream Cheese Layer:
  • ½ cup unsalted butter-softened
  • 1 cup powdered sugar
  • 8 oz cream cheese-softened
  • 1 teaspoon vanilla
  • 1 cup Cool Whip
  • Chocolate Pudding Layer:
  • 2 (3.9 oz.) packages chocolate instant pudding
  • 2 and 3/4 cups cold milk
  • Topping:
  • 2 cups Cool Whip
  • 1 ½ cups crushed Oreo
  • Peeps bunnies, Easter egg candies…

Instructions

  1. In a food processor finely crushed Oreo cookies into fine crumbs. If you don’t have food processor, place Oreo cookies into ziplock bag and crush the cookies with a rolling pin.
  2. Using a fork mix crushed Oreo with melted butter, then press the mixture into the bottom of 9 x 13 inches dish. Place in the fridge to firm.
  3. Beat cream cheese, softened butter, sugar and vanilla until it’s light and creamy. Stir in 1 cup Cool Whip. Spread the mixture over the crust and place in the fridge.
  4. In a medium bowl mix chocolate instant pudding with 2 and 3/4 cups cold milk. Whisk for a few minutes until the pudding starts thickening. Spread the pudding over the cream cheese layer. Place in the fridge for 10 minutes.
  5. Spread 2 cups Cool Whip on top and sprinkle with crushed Oreo. Refrigerate at least 4 hours before serving.
  6. Garnish with Peeps and Easter egg candies.

  • 1 cup uncooked wild rice blend
  • 4 cups fresh or frozen cauliflower florets
  • 2 tablespoons olive oil
  • 1 large white or yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 stalks celery, trimmed and diced
  • 1/2 teaspoon dried thyme or more to taste
  • 1/2 teaspoon dried rosemary or more to taste
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 1/2 cups filtered water
  • 2/3 cup raw cashews, soaked for two hours (unless using a high-speed blender)
  • 1/4 cup nutritional yeast
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons sea salt, plus more to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the rice according to package instructions. Drain and set aside.
  2. Meanwhile (about halfway through cooking the rice), bring a large pot of water to a boil. Add the cauliflower florets and boil for 7 to 10 minutes, or until fork-tender. Drain and set aside.
  3. While the cauliflower boils, heat the olive oil in a large stockpot or dutch oven over medium-low heat. Add the onion, carrots, celery, thyme, and rosemary. Sauté for about 5 minutes, or until the vegetables just begin to soften, stirring occasionally. Add the garlic and continue to cook for another minute, or until it begins to soften.
  4. Stir in the vegetable broth, increase the heat to medium-high, and bring to a boil. Reduce the heat to low, cover, and simmer for 10 minutes.
  5. Meanwhile, add the boiled cauliflower to a high-speed blender along with the filtered water, cashews, nutritional yeast, lemon juice, and sea salt. Blend on high for two minutes, or until completely smooth and creamy.
  6. Add the cauliflower cream mixture and the cooked rice to the pot of soup and stir to incorporate. Increase the heat to medium-low and continue to simmer for just 5 minutes.
  7. Taste and generously season with more sea salt and black pepper to taste. (I usually add another 1 teaspoon of sea salt and lots of freshly ground black pepper.)
  8. Serve warm.
  9. Leftovers can be refrigerated for up to 5 days or frozen for up to 1 month.
  10. If the soup is thicker than desired after refrigerating and reheating, simply whisk in a bit more vegetable broth or filtered water and adjust seasonings as needed.

  • 6 oz marinated artichoke hearts diced
  • 3 cups baby spinach chopped
  • 4 oz vegan cream cheese plain or herb & garlic
  • 1/4 cup vegan mayo
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • red pepper flakes optional

Instructions

  1. Preheat oven according to pizza crust instructions.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute, stirring frequently. Add artichoke hearts and spinach. Stir to combine and cook until spinach begins to wilt. Add cream cheese, mayo, garlic powder, salt, pepper and red pepper flakes to pan and stir to combine. Heat through and adjust seasonings as needed.
  3. Top pizza crust with warm dip and spread evenly. Place in the oven and cook according to crust package instructions.
  4. Remove from the oven, slice and enjoy!

Ingredients

  • 1 lb ground chicken (uncooked)
  • 2 cups uncooked sweet potato, finely grated (I used a wide cheese grated like this or you can use your food processor)
  • 2–3 sprigs green onion, chopped fine
  • 2 tbsp coconut oil + 1 tsp for greasing the baking sheet
  • 2 tbsp coconut flour (I recommend this brand )
  • 1/2 tsp black pepper (omit for AIP)
  • 1 tsp sea salt
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • Optional: 1 tsp paprika or chili powder (not AIP but adds a kick!)






Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper lightly greased with oil
  2. Combine all of the ingredients in a large mixing bowl and thoroughly mix.
  3. Begin rolling the mixture into small, slightly flattened poppers about one inch in diameter (you’ll have about 20-25 poppers) and place them on the baking sheet
  4. Place in the oven for 25-28 minutes, flipping halfway through. Crisp further in a pan or place under the broiler if desired for 1-2 minutes to crisp further. Remove from the oven when thoroughly cooked through
  5. Allow to cool and serve with your favorite sauce! These are made for dipping so pair them with guacamole, ketchup, mustard, etc!
