Ingredients

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seeds
  • 1/2 cup semisweet chocolate chips (or vegan chocolate chips)
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.*
  2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
  3. Makes about 20-25 balls.

  • 1 teaspoon vanilla extract

  • 9- inch store bought chocolate Oreo pie crust
  • Chocolate syrup for garnish optional
  • Peanut butter chips for garnish optional

Instructions

  1. Using an electric mixer beat cream cheese, peanut butter, sugar, milk and vanilla extract in a large bowl until creamy.
  2. Fold in 1 of the 8-ounce containers of cool whip. Reserve the other container of cool whip for serving.
  3. Spread mixture into prepared pie crust.
  4. Chill pie in the refrigerator for at least 4 hours or overnight.
  5. Before serving top pie with remaining cool whip.
  6. Garnish with chocolate syrup and peanut butter chips if desired.

  • 1 ¼ c. Almond flour
  • ¾ c. Swerve or other keto friendly sweetener
  • 1 Stick of butter
  • 1 tsp. Baking powder
  • 1 Egg beaten
  • 1 tsp. Vanilla extract
  • Dash of salt

Instructions

  1. Combine one stick of butter and ¾ of a cup of Swerve sweetener in mixing bowl. Mix butter and Swerve together until creamy.
  2. In another bowl, combine almond flour and baking powder.
  3. In the mixing bowl with the butter mixture, add 1 beaten egg and 1 tsp of vanilla. Mix together until smooth
  4. .
  5. Add dry ingredients to wet ingredients, and mix on high speed until thoroughly combined.
  6. Place the dough in plastic wrap. Wrap the dough tightly, and place in the fridge for at least 1 hour.
  7. After 1 hour remove the dough from the fridge and Preheat the oven to 325 degrees
  8. Roll the dough into small balls about the size of a large marble. Place 12 on a baking sheet. These cookies will expand so leave space between each cookie.
  9. Using a fork, press down gently on each of the cookie dough balls*.
  10. Bake the cookies for 10-15 minutes, remove the cookies when they are golden brown. Let the cookies sit and cool on the baking sheet for several minutes. They will harden as they cool, making them easier to remove.

  • 2 cups half-and-half
  • 1 cup heavy cream
  • 1 cup lemon curd
  • 1/2 cup sugar
  • 1 cup blueberries






Instructions

  1. Using a blender, mix together the curd, sugar, cream and half-and-half or about a minute. Refrigerate the mixture for 4 hours or overnight.
  2. Pour the mixture into the ice cream maker and churn according to the ice cream maker's directions.
  3. Once the ice cream has finished churning and is thick and creamy, muddle the berries and fold them into the ice cream creating swirls and distributing the berries. Transfer to a container and allow the ice cream to freeze for at least 4 hours before serving.

  • 3 tablespoons butter
  • 2 pounds chuck roast, trimmed+ cubed (or stew meat works too)
  • 2 tablespoons all-purpose flour
  • 1 onion, diced
  • 8 ounces baby Bella mushrooms, cut into thick slices
  • 1 ½ teaspoon EACH: garlic powder AND sugar
  • 1 teaspoon EACH: onion powder, dried thyme, AND mushroom powder
  • 1 tablespoon Worcestershire sauce
  • 1 large bay leaf
  • ½ cup pepperoncini peppers, thinly sliced
  • 1 ½ – 2 cups low sodium beef stock (see directions)
  • 2 tablespoons cornstarch (mixed with a few tablespoons of water)

Instructions

  1. SEAR: Season the beef with the flour, a big pinch of salt and pepper; mix well. Heat the butter in the instant pot on the sauté setting or a cast iron skillet over medium-high heat. When it melts sear the beef in batches to form a brown crust, remove to a plate, and continue searing the remaining beef. Add the onions and switch to a wooden spoon. Sauté them for 1 minute, scraping the bottom of the pot to make sure no brown bits are left stuck on.
  2. SLOW COOKER: Place 2 cups of beef stock along with the remaining ingredients in the slow cooker (except the corn starch) and cook on high for 3-4 hours or low for 5-7 hours. 35 minutes before the cooking time is up, combine ½ cup of the liquid from the slow cooker and the cornstarch in a small bowl, whisk until smooth. Add to the slow cooker and allow for the food to cook for the remaining 30 minutes. If the gravy is too thick, add a few tablespoons of water to thin it to your desired consistency. If you still find your gravy is thin, add more cornstarch mixed with a tablespoon of water. Adjust salt and pepper to preference and serve over rice/mashed potatoes/cauliflower mash, etc.
  3. OR INSTANT POT:  Place 1 ½ cups of beef stock along with the remaining ingredients in the instant pot (except the cornstarch) and select the meat/stew setting. Cook on manual high pressure for 35 minutes. Once the stew is cooked allow natural pressure release for 10-15 minutes. This gives the meat a chance to really soak up all those flavors. Click the ‘sauté’ setting. Dissolve the cornstarch with 2-3 tablespoons of water and add that to the instant pot once the liquid starts bubbling. Allow the sauce to thicken, about 1-2 minutes, stir to combine. If the gravy becomes too thick, you can add a couple more tablespoons of water to thin it to your desired consistency. Adjust salt and pepper to preference and serve over mashed cauliflower, mashed potatoes, rice, or egg noodles.

Instructions

  1. Preheat oven to 350°.
  2. In a large mixing bowl, mix the butter, sugars, eggs, vanilla, salt, baking powder and baking soda with an electric mixer until smooth.
  3. Stir in flour, caramel chips and chocolate chips with a wooden spoon to combine.
  4. Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
  5. Bake for 13-15 minutes or until edges are light brown.

Instructions

  1. In a medium pot, bring the chicken broth to a boil.
  2. Add in the tortellini; reduce heat to a simmer and cook for 7 minutes until pasta is almost tender.
  3. Add in tomatoes and continue to cook for another 1-2 minutes until tomatoes have just softened.
  4. Stir in the pesto and cream.
  5. Taste and adjust with a little bit of salt and pepper, if necessary. And a pinch of cracked red pepper flakes for a little kick, if desired.
  6. Ladle into bowls and sprinkle with some fresh parsley.

Instructions

  1. In a large bowl, add thawed frozen orange juice concentrate, granulated sugar, and marshmallow fluff. Use a hand mixer or whisk and mix ingredients well.
  2. Add cool whip to bowl and mix again until ingredients are combined. Tip: Before adding in the cool whip, I like to stir it until it becomes a little "soupy." This makes blending and pouring the mousse a little easier. See above video for example of consistency.
  3. If desired, add a few drops of orange food coloring and give the mousse a final mix.
  4. Pour prepared orange mousse into individual serving cups, then chill cups for at least 4 hours or until set.
  5. Serve orange creamsicle marshmallow mousse with whipped cream and orange slices as garnish.
