Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/4 cup heavy whipping cream
  • 1/4 cup peanut butter
  • 3/4 cup Lily's Sugar Free chocolate (I used 1.5 bars)
  • 2 tsp coconut oil

Instructions

  1. Mix cream cheese, erythritol, and heavy whipping cream until smooth
  2. Mix in peanut butter and vanilla extract until fully combined, set aside
  3. Melt chocolate and mix with coconut oil
  4. Brush silicone cups (I use these) with chocolate mixture and place in freezer for 5 minutes
  5. Repeat previous step and freeze for 10 minutes
  6. Place a couple spoonfuls of cheesecake fluff into cup and freeze for 15 minutes
  7. Top cups with chocolate to cover cheesecake fluff
  8. Freeze for 20 minutes covered or refrigerate for 1 hour

  • 2 large skinless boneless chicken breasts , halved to make four fillets
  • Dressing / Marinade:
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (juice of 1 lemon)
  • 1 tablespoon red wine vinegar
  • 2 teaspoons minced garlic (or 2 large garlic cloves, minced)
  • 2 tablespoons dried oregano
  • 1 teaspoon salt
  • Cracked pepper For The Salad:
  • 4 cups romaine lettuce leaves (or cos lettuce), washed and shredded
  • 2 large Lebanese cucumbers , halved lengthways and sliced
  • 2 vine ripened tomatoes , cut into small wedges
  • 1/2 green pepper (or capsicum), deseeded and sliced
  • 1/2 red onion , sliced thinly
  • 7 oz | 200 g fresh Feta cheese , cubed
  • 1/2 cup (3 oz | 80 g) pitted Kalamata olives, halved lengthways
  • 1 avocado

Instructions

  1. Whisk together all the marinade / dressing ingredients in large, shallow dish. Pour out 1/2 cup to use as the dressing; reserve in the refrigerator for later to use as the dressing.
  2. Add the chicken to the marinade in the shallow dish and evenly coat; cover and allow to marinade for 30 minutes.
  3. While chicken is marinading, prepare all of the salad ingredients (except for the avocado) in a large bowl and mix.
  4. Heat a large grill pan or cast iron skillet over medium-high heat. Remove the chicken from the marinade and add to the pan along with any marinade left over in the bowl. Grill or sear until the chicken is golden on the outside and cooked through, (about 5-6 minutes each side).
  5. Remove chicken from the pan and allow to rest for 5 minutes. Slice thickly and arrange over salad. Slice avocados and arrange on salad. Drizzle with the reserved UNTOUCHED dressing, and serve!

  4. Slice the green onions, halve the cherry tomatoes, and dice the avocado.
  5. When quinoa is done cooking, add it to the large bowl with spinach and toss. (The heat from the quinoa will lightly wilt the spinach and mellow the garlic.)
  6. Add the green onions, tomatoes, red wine vinegar, and salt. Stir to combine.
  7. Add the avocado and lightly toss.
  8. Serve immediately or refrigerate to let flavors blend more.

Instructions

  1. Preheat oven to 350 and line 18 muffin cups with liners. Set aside.
  2. Using an electric mixer, beat cake mix, water, 2 cups mashed banana, eggs, vegetable oil, and vanilla for 2 minutes. Divide batter between muffin cups, filling almost to the top. (They won't rise much due to the bananas.)
  3. Bake 20 to 25 minutes. Let cool.
  4. To make frosting, beat butter with an electric mixer for 1 minute.
  5. Mix together banana and lemon juice. Add to mixer and beat until incorporated into butter.
  6. With mixer on low, add brown sugar and then powdered sugar 1 cup at a time.
  7. Beat in rum, vanilla extract, and cinnamon. Use an offset spatula or pastry bag fitted with a large star tip to frost cupcakes.
  8. To make praline sauce, melt butter in a medium skillet over low heat.
  9. Add light brown sugar and cinnamon, turn heat to medium and cook 3 to 4 minutes stirring constantly.
  10. Turn heat to low and add dark rum, praline liqueur, and salt. Cook 5 minutes.
  11. Add banana slices and remove from heat. Cool to room temperature before drizzling on cupcakes.

  4. Grease a baking dish and add ground beef mixture.

  7. Bake for 15-20 minutes or until the casserole turns golden brown.

  5. Cut the butter into smaller pieces and add it to the dry ingredients.
  6. Mix on low speed until the mixture resembles damp sand (30 seconds to a minute).

  8. When all of the eggs are fully incorporated, add the Greek yogurt (or sour cream) and vanilla, and beat on medium speed for about 60 to 90 seconds, to aerate the batter and strengthen the cake's structure.
  9. Divide the batter evenly between the three prepared pans, and bake for 30-40 minutes, or until a toothpick inserted in the thickest part of the cake comes out clean or with one or two moist crumbs.
  10. Cool completely, then soak with cocoa simple syrup (optional), and fill and frost.
  11. To make the cocoa simple syrup (optional):
  12. Place the sugar and cocoa powder in a small pot and whisk to combine.
  13. Stir in the water and place over medium heat.
  14. Cook, stirring occasionally, until all the sugar has dissolved.
  15. Place one cake layer on a serving platter. Use a pastry brush to soak the cake with the simple syrup before topping with filling. Repeat as you add each layer.

  • 5 Tbsp Lakanto MonkFruit Sweetener - classic

  • Juice of 1/2 a Lemon
  • 32 Blueberries (about a 1/2 cup)

Instructions

  1. Mix together butter, almond flour, and 2 Tbsp Lakanto Monkfruit sweetener
  2. Press 2 teaspoons of mixture into the bottom of each section of the ice cube tray. 
  3. In a medium bowl beat cream cheese then add plain unsweetened greek yogurt, vanilla extract, lemon juice and 3 tablespoons of Lakanto Monkfruit Sweetener
  4. Evenly distribute cream cheese mixture on top of crust and smooth tops with a spoon.
  5. Top each cheesecake with 2 blueberries and insert a popsicle stick in the centers about 3/4 of the way into each cheesecake (optional)
  6. Freeze for at least 2 hours, once frozen loosen the sides of the cheesecakes with a butter knife and pop each cube out
  7. Keep Cheesecake bites stored in the freezer
