Ingredients
  • 1 Tbsp. butter
  • 2 pieces sourdough bread
  • 4 slices Swiss cheese
  • 4 pieces bacon cooked
  • 1/2 jalapeno sliced (*for less spice, remove seeds)
  • 3 Tbsp. blackberry jam
Instructions
  1. Butter one side of each slice of bread. Place bread, butter side down, in skillet.
  2. Top one piece of bread with cheese, bacon, and jalapeƱos.
  3. Top the other piece of bread with blackberry jam.
  4. Put sandwich together; grill over medium heat, flipping after 4-5 minutes.
  5. Grill until both sides are golden brown and cheese is melted.

  • FOR THE CHICKEN:
  • 1 1/4 pound chicken (cut into bite size pieces)
  • 3/4 cup corn starch
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic salt
  • 1/2 cup canola oil
  • 2 large eggs (whisked)
  • FOR THE SWEET AND SOUR SAUCE:
  • 3/4 cup sugar
  • 1/2 cup rice vinegar (distilled vinegar will work too)
  • 1/3 cup ketchup
  • 1 Tablespoon soy sauce
  • 1 teaspoon garlic salt

Instructions

  1. Pre-heat oven to 325°F. Line a rimmed baking sheet with foil. Set aside.
  2. Place the chicken, corn starch, salt, pepper and garlic salt in a large ziplock bag and shake until the chicken is evenly coated.
  3. Heat 1/4 cup oil in a large frying pan over medium heat. Dip the chicken in the egg mixture and place in the frying pan with a fork. I did half the batch first. Fry both sides of the chicken for about 2 minutes a piece and place chicken on the pan. Dispose of the burnt oil and then heat up the rest of the oil and finish the chicken.
  4. In a medium size bowl, whisk together all of the ingredients for the sauce. Next, pour the sauce over the chicken and bake for 20 minutes. Pull the chicken out and flip the chicken to evenly coat it with sauce. Then bake for an additional 15-20 minutes.
  5. Serve with steamed rice and vegetables. Enjoy!

  • Donuts
  • 10 Tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1/2 granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 2 cups apple cider (reduced to 3/4 cup)
  • 3 teaspoons baking powder
  • 2 1/2 cups all-purpose flour
  • 3 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • pinch salt
  • Topping
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup granulated sugar

Instructions

  1. Preheat oven to 350°. Spray a donut pan with cooking spray and set aside.
  2. Before you begin, you will need to reduce the apple cider. Pour apple cider in a small saucepan a simmer on low-medium heat for 15-20 minutes or until the cider reduces down to 3/4 cup. Once it is reduced, set it aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, pinch of salt, cinnamon and nutmeg and set aside.
  4. In a separate bowl, mix the melted butter and sugars together until smooth. Add in the eggs and vanilla and stir until completely combined. Pour in the buttermilk and apple cider and mix until smooth. Stir in the flour mixture and mix until just incorporated. Do not over mix or donuts will be tough.
  5. Pour the batter into a ziploc bag and snip off one corner. This makes it much easier to pour into the donut wells. Pour batter into prepared pan about 3/4 to the top of each well. Bake for 14-15 minutes or until the tops are firm and spring back slightly when you touch them. Do not over bake or you will have dry donuts.
  6. When done, remove donuts from the oven and let them cool in the pan for 5 minutes then remove them carefully and place on a wire rack to cool until they are warm to the touch so you are able to handle them. While they are cooling, get your butter + cinnamon sugar topping ready.
  7. In a small bowl, melt butter in the microwave. Set aside.
  8. In a separate bowl, mix together the cinnamon and sugar. Set aside.
  9. Once donuts are cool enough to be handled, dip the tops into the melted butter and then quickly into the cinnamon sugar mixture. Repeat for the entire batch of donuts.
  10. These Apple Cider Donuts are best served fresh the same day, but will stay soft for up to 2 days stored in an airtight container. If they get a bit firm, you can reheat in the microwave for a few seconds to soften them up and they are good as new.

  • 4 boneless, skinless chicken breasts
  • 24 ounces broccoli florets*

Instructions

  1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. In a small bowl, whisk together 2 tablespoons olive oil, butter, honey, brown sugar, Dijon, garlic, oregano and basil; season with salt and pepper, to taste. Set aside.
  3. Place potatoes in a single layer onto the prepared baking sheet. Drizzle with remaining 1 tablespoon olive oil and season with salt and pepper, to taste. Add chicken in a single layer and brush each chicken breast with honey mixture.
  4. Place into oven and roast until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.* Stir in broccoli during the last 10 minutes of cooking time. Then broil for 2-3 minutes, or until caramelized and slightly charred.
  5. Serve immediately, garnished with parsley, if desired.

    • 1/2 cup (113 grams) unsalted butter (1 stick)
    • 1/2 cup (120 ml) heavy cream or heavy whipping cream (36-40% butterfat content)
    • 3 tablespoons water
    • 1/4 cup (60 ml) light corn syrup
    • 1 cup (200 grams) sugar
    • 1/2 teaspoon course or flaked sea salt






    Instructions

      PREPARE PAN AND INGREDIENTS
      • Lightly oil a 9 x 5 inch loaf pan then measure and cut a piece of parchment paper that will fit inside the pan and come up the sides by at least 1 inch. Next, lightly oil the parchment paper and place into the pan. Set the pan aside.Salted Caramels Recipe Step 1
      • Cut butter into 8 pieces then combine with heavy cream in a small microwave-safe bowl. Heat in the microwave for 1 to 2 minutes until hot and butter has melted. Set aside, we will use this later.
      MAKE CARAMEL
      • In a small saucepan combine the water and corn syrup. Then, add the sugar, but try your best not to splatter the sugar up the sides of the pan. Now, use a spoon to gently stir the sugar into the water and corn syrup, just moistening the sugar.
      • Heat over medium heat until the sugar has come to a boil. Then, cover with a lid for 1 minute. This adds steam/moisture to the pan, so any sugar that may have stuck to the sides of the pan melts and falls back into the boiling sugar.
      • Remove lid then attach a candy thermometer to the side of the saucepan. Then, cook sugar for 5 to 10 minutes, until the sugar reaches a temperature of 320 degrees F. At this temperature, the sugar will take on a light amber color around the edges of the pan.
      • The moment the sugar reaches 320 degrees F, carefully pour about a sixth of the butter and cream mixture then stir, using the base of the candy thermometer to incorporate it. Repeat with the remaining cream and butter (adding a sixth of it at a time then stirring). The sugar will bubble violently as you add the butter and cream – so do this carefully and slowly to prevent the mixture from bubbling over the sides of the saucepan.
      • By adding the cream and butter, the temperature will drop. Now, continue cooking for another 5 to 10 minutes, until the caramel reaches a temperature of 240 degrees F. This will create a soft caramel, if you want slightly harder caramels, bring the temperature closer to 245 degrees F.
      • The moment the caramel reaches your desired temperature, pour into the prepared loaf pan. Cool 20 to 30 minutes then scatter the salt over the caramel. Then, let the caramel cool 3 1/2 hours.Salted Caramels Recipe Step 4
      TO FINISH
      • Unmold the caramel. If the caramel is too soft to work with, place into the refrigerator 30 to 45 minutes to firm up. Then, use a large sharp knife to cut into your desired shape. We like to cut into 1-inch by 1/2-inch rectangles.
      • Wrap caramels in plastic wrap or waxed paper and enjoy immediately, or you can refrigerate or freeze for enjoying later.

    8. Bake until a wooden pick inserted in the center comes out clean, 35-40 minutes.
    9. Let the cake cool in the pan and slice and serve the cake from the pan. This cake is even better if it is still warm when served!
    10. Drizzle each slice of cake with salted caramel sauce to serve.

    • 1 cup balsamic vinegar
    • homemade seasoned salt and pepper
    • For the bruschetta topping:
    • 1/4 cup packed fresh basil, chopped
    • 1 medium-sized garlic clove, pressed or finely minced
    • salt and pepper
    • 3 Tablespoons extra virgin olive oil
    • 2 cups diced tomato (see notes)
    • 3 Tablespoons freshly grated parmesan cheese
    • 1/2 teaspoon sugar
    • 3 Tablespoons balsamic vinegar

    Instructions

    1. Add balsamic vinegar to a small saucepan then turn heat to medium-high and bring to a boil, stirring occasionally. Turn heat down to medium then simmer and reduce until you can see the bottom of the pot for a second or two after scraping a spatula across it (see photo in post), about 20 minutes. Vinegar will continue to thicken as it cools, FYI. Set aside to cool - can be done a day ahead of time.
    2. Meanwhile, add ingredients for bruschetta topping in a medium-sized bowl then stir to combine and set aside. Can be done a day ahead of time.
    3. Place an oven rack directly underneath the broiler then preheat to high.
    4. Place a large skillet over medium-high heat then spray with nonstick spray. Season chicken on both sides with homemade seasoned salt and pepper then add to the skillet and saute until golden brown on the bottom, 2-4 minutes depending on the thickness of your chicken cutlets/breasts. Turn heat down to medium then flip chicken and saute until nearly cooked through, 4-6 additional minutes, flipping chicken again if necessary. Sometimes I place a lid on top of the skillet if it feels like the chicken is browning too quickly on the outside but still raw on the outside.
    5. Spoon 2-3 Tablespoons bruschetta topping on top of each piece of chicken followed by 1/4 of the cheese. Transfer skillet under the broiler then broil until cheese is melted. Scoop chicken onto plates then drizzle with balsamic reduction. Serve extra bruschetta topping on the side.

    • 1 bottle Lawry's Baja Chipotle 30 minute marinade (or Mesquite)
    • 4 boneless chicken breasts, pounded to an even thickness
    • 1 Tbsp olive oil
    • 1 cup orzo
    • 2 cups chicken broth
    • 2 Tbsp tomato paste
    • 2 tsp Southwest Seasoning or chili powder
    • 1 (8-oz) package Velveeta, diced
    • 1 (10-oz) can diced tomatoes and green chilies

    Instructions

    1. Pour Baja Chipotle Marinade over chicken and let marinate in the refrigerator for 30 minutes or overnight. When ready, grill chicken until done (165 degrees).
    2. While the chicken is grilling prepare the orzo.
    3. Heat oil in a large saucepan over medium heat and add orzo. Cook, stirring constantly, until lightly browned. Stir in Southwestern Seasoning or chili powder, tomato paste and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 15 to 20 minutes. Fluff with a fork.
    4. Combine diced tomatoes & green chiles (undrained) and Velveeta in a medium bowl. Heat on HIGH in the microwave in 30 second intervals until cheese is melted.
    5. To assemble the Queso Smothered Chicken - place 1/4 of the orzo on a plate, top with grilled chicken. Pour 3-4 Tbsp cheese dip over chicken and orzo.
