Ingredients

  • For the Base & Crumble Topping
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats , or large flake oats (not quick oats or instant oats)
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter , melted
  • 1 large egg yolk
  • 1 tablespoon packed brown sugar
  • For the Blueberry Layer
  • 2 cup blueberries , fresh or frozen - see baking time adjustment if using frozen
  • 2 tablespoons lemon juice , freshly squeezed (use 1 tablespoon if using frozen berries)
  • 1/4 cup granulated sugar
  • 2 teaspoons cornstarch

Instructions

  1. Preheat the oven to 350F degrees. Line an 8x8 baking pan with aluminium foil and grease with non-stick cooking spray.
  2. In a medium bowl whisk together the flour, oatmeal, granulated sugar, 1/4 cup brown sugar, cinnamon, and salt. Gently stir in the melted butter & egg yolk.
  3. Remove 1 cup of the mixture.
  4. Press the remaining mixture into the bottom of the prepared pan.
  5. In a medium bowl mix together all the ingredients for the blueberry layer. Spoon over top of the base oatmeal cookie mixture in the pan.
  6. To the reserved 1 cup of oatmeal mixture, stir in the 1 additional tablespoon of brown sugar. Crumble the mixture over top of the blueberry layer. I like to form big crumbles by squeezing it in my fist.
  7. Bake in the preheated oven for about 40-45 minutes or until you see the blueberries bubbling and the top crumble turning golden brown. If you used frozen berries, the bake time will be 50-55 minutes.
  8. Allow to cool fully to room temperature (at least 3 hours) before cutting into the bars. Bars are easiest to cut when they're cold using a sharp knife.

  • 1 lb boneless skinless chicken breast, cut into bite size pieces
  • salt and pepper
  • for the sauce:
  • 1/4 cup packed light brown sugar
  • 1/4 cup low-sodium soy sauce
  • 2 Tablespoons rice or apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 2 cloves garlic minced
  • 1 Tablespoon cornstarch
  • additional:
  • rice
  • steamed broccoli






Instructions

  1. Cook rice according to instructions on packaging.
  2. Steam broccoli.
  3. Season chicken pieces with salt and pepper and place in large non stick skillet.
  4. Cook until done, stirring often.
  5. In a small bowl or a measuring cup, combine brown sugar, soy sauce, ginger, garlic, vinegar and cornstarch. Whisk together until there are no cornstarch lumps. Add sauce to chicken and cook stirring constantly, until it thickens into shiny glaze.
  6. Remove from heat and serve immediately with rice and steamed broccoli.

  • 1/2 cup chopped pecans
  • 1 1/2 cups sweetened flaked coconut
  • 1 box chocolate fudge cake mix
  • eggs, oil and water according to cake mix package
  • 1/2 cup butter melted
  • 8 ounces cream cheese softened
  • 2 1/2 cups powdered sugar
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Coat a 9"x13" pan with cooking spray.
  2. Place the pecans and coconut in an even layer in the bottom of the pan.
  3. Prepare the cake mix according to package directions and pour the cake batter over the coconut and pecans.
  4. Place the cream cheese in a medium bowl and beat with a mixer until smooth. Add the butter and beat until combined.
  5. Gradually add the powdered sugar to the cream cheese mixture and beat on low speed until smooth.
  6. Place dollops of the cream cheese mixture on top of the cake batter. Sprinkle the chocolate chips over the cake.
  7. Bake the cake for 40 minutes or until the cake has set.
  8. Cool, cut into squares and serve.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 1 cup + 2 tablespoons light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 large eggs, at room temperature
  • 1 cup white chocolate chips
  • 1 cup peanut butter chips
  • 1/2 cup Reese's Pieces (I used the minis but full-sized are OK, too)

Instructions

  1. Preheat oven to 375 degrees (F). Line 2 large baking sheets with parchment paper and set aside. In a medium sized bowl whisk together the flour, baking soda, and sea salt; set aside.
  2. Add the sugars, vanilla, and butter to a large bowl and whisk until light and fluffy; about 2 minutes (I recommend using a stand mixer/ handheld mixer to help here, if you have one). Add the eggs and beat quickly – for only about 30 seconds – until they’re just combined. Let the mixture rest for 5 minutes, then beat the eggs for another 30 seconds. Gently fold in the flour mixture with a rubber spatula, stirring only until the flour begins to disappear. Fold in white chocolate, peanut butter chips, and Reese's Pieces.
  3. Roll 3 tablespoon sized balls of dough between your palms to form a ball (they should be big; almost a 1/4 cup), then place on prepared sheet (make sure to leave enough room in between each cookie for inevitable spreading). Continue this process until all the dough has been rolled. Place baking sheets in preheated oven and bake for 11 minutes, or until golden at the edges but still soft in the middle. Let cookies cool for 5 minutes on the sheet before transferring to a wire wrack to cool completely.

  • The Filling:
  • 4-8oz. blocks of Cream Cheese..softened
  • 4 Eggs
  • 1 tablespoon Vanilla Extract
  • 1 cup Granulated Sugar
  • 1 can cherry pie filling for the topping

Instructions

  1. Press the cookie dough into the bottom of an 8 inch springform pan and bake at 350 about 15 minutes until almost done.
  2. Let cool.
  3. Meanwhile, beat cream cheese and sugar.
  4. Add vanilla and one egg at a time, beating well.
  5. Pour into crust.
  6. Lower oven to 325 and bake 75-90 minutes until cooked through and browned.
  7. Chill overnight in fridge and top with canned cherry pie filling.

  • 2 large chicken breasts
  • 1 medium Vidalia onion (Sweet)
  • 5 slices bacon
  • 2 large potatoes
  • 1/2 cup canned mushroom (1 Cup Fresh)
  • 1 (10 3/4 ounce) cream of chicken soup
  • 3/4 cup chicken broth
  • 1 tablespoon melted butter
  • salt
  • pepper
  • garlic powder

Instructions

  1. Preheat oven to 425 degrees.
  2. Cook the bacon; crumble and set aside; reserve bacon grease.
  3. Peel and cube the potatoes; fry potatoes in bacon grease.
  4. Dice the onion; season with salt, pepper and garlic powder and fry in the bacon grease.
  5. Fry the mushrooms in the bacon grease.
  6. Coat the chicken breasts with melted butter and season with salt and pepper and grill (I used the George Foreman grill).
  7. After the chicken is cooked, cut into cubes.
  8. Take Cream of Chicken soup and mix with 3/4 cup broth and season with pepper to make a sauce.
  9. In an 8×8 glass dish combine chicken, mushrooms, onions and potatoes. Top with sauce and mix it all up so everything is coated in the sauce.
  10. Bake for 30 minutes covered with foil.
  11. Remove foil, top with crumbled bacon and bake an additional 10 minutes, uncovered.

  • 1 Tablespoon olive oil
  • 2 pounds stew meat or chuck roast cut into 1 inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • ½ teaspoon garlic granules
  • Gravy
  • 3 tablespoons butter divided
  • 1/2 cup all-purpose flour
  • 3 cups beef broth
  • 1/2 cup dry red wine or additional beef broth
  • 1 Tablespoon worcestershire sauce
  • 1 Tablespoon red wine vinegar
  • 2 tsps tomato paste
  • 1/2 tsp dried parsley
  • ½ tsp dried oregano
  • 1/4 tsp dried thyme
  • The Rest
  • 1 yellow onion diced
  • 1 Tablespoon minced garlic
  • 12 ounces cremini mushrooms sliced

Instructions

  1. Chunk meat into 1 inch cubes, pat dry with paper towels, then season with salt, pepper, and garlic granules.
  2. Heat 1 tablespoon olive oil in a large skillet over medium high heat, and add beef to skillet, browning it on all sides. Try not to stir too much so you can get a nice sear and a good crust.
  3. Transfer beef to a 6-QT crock pot. Leave any juices in skillet for gravy.
  4. Add 2 tablespoons butter, to the juices in skillet, and add in your onions, minced garlic and mushrooms. Quick saute for 3-5 minutes until mushrooms start to release their juices, then add mushrooms, garlic, and onions to slow cooker. Leave any juices in pan.
  5. Return pan to medium high heat and add an additional 1 Tbs of butter to the pan juices (2 if you accidentally poured the juices into your slow cooker). Let butter melt.
  6. While still over heat, whisk flour into the butter, until a thick paste has formed. Then add the beef broth, dry red wine, worcestershire, red wine vinegar, tomato paste and herbs stirring it all together.
  7. Bring to a boil then reduce heat and allow gravy to simmer until thickened to the consistency of thick gravy.
  8. Pour gravy into slow cooker, and stir.
  9. Place lid on slow cooker, and cook on high for 3-4 hours or on low for 5-7 hours, until beef is tender. Taste and season with additional salt and pepper as needed.
  10. Serve over mashed potatoes, pasta or rice.

  • 1 large head cauliflower
  • 2 bulbs roasted garlic
  • 1 tbsp olive oil
  • 1/3 cup **Silk unsweetened almond milk or regular milk
  • 3/4 tsp salt
  • 1/8 tsp pepper

  1. Slice off top of garlic bulb so that the inner cloves are exposed. Drizzle with olive oil. Wrap in foil and roast at 400 degrees for 25-30 minutes; set aside to cool.
  2. Wash and cut cauliflower into medium chunks, removing all leaves and green parts.
  3. Place cauliflower in large saucepan; cover with water and bring to a boil. Place lid on saucepan and boil for 8 minutes.
  4. Drain Cauliflower.
  5. Pat cauliflower dry with paper towel.
  6. Place cauliflower, Silk almond milk or (*heavy cream and butter), salt, and pepper in bowl of large food processor.
  7. Add roasted garlic.
  8. Process until cauliflower is a smooth puree, close to the texture of mashed potatoes. Serve immediately or place in refrigerator to serve later. To reheat, bake in oven at 375 degrees for 30 minutes.
