Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9-inch round cake pan with non stick cooking spray.
  3. Carefully unwind each roll into a long strip of dough, leaving center coiled.
  4. Coil the unrolled end of each strip in toward center, making two equal coils.
  5. Pull middle of strip down to make a point, forming a heart shape; pinch point.
  6. Place in pan, points toward center.
  7. Bake 13 to 15 minutes or until golden brown.
  8. Cool 5 minutes before removing to cooling rack.
  9. Spread or drizzle frosting over warm rolls.
  10. Optional: add sprinkles.

  • 1/2 cup finely chopped pecans
  • 1/2 cup bread crumbs
  • 2 tablespoons honey, divided
  • 2 tablespoons Dijon mustard, divided
  • 2 boneless, skinless chicken breasts, cut in half horizontally into 2 thinner pieces
  • salt and pepper
  • 1 tablespoon olive oil or vegetable oil
  • 1 tablespoon butter
  • 3 tablespoons bourbon
  • 1/4 cup heavy cream
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup chopped pecans
  • 1 tablespoon butter

Instructions

  1. Combine finely chopped pecans and bread crumbs in a large ziptop bag. Set aside.
  2. In a small bowl, stir together 1 tablespoon of honey and 1 tablespoon of Dijon mustard.
  3. Season chicken breasts with salt and pepper and brush the honey/dijon mixture on both sides.
  4. One at a time, add a chicken breast to the pecan/bread crumb mixture, shaking the bag to coat it well.
  5. Preheat oven to 375 degrees
  6. Heat butter and oil in a large pan over medium heat. Add chicken and cook until golden brown on both sides.
  7. Transfer chicken to a casserole dish and place in oven to finish cooking, about 10 to 12 minutes.
  8. Wipe pan clean. Add bourbon, 1 tablespoon honey, 1 tablespoon Dijon mustard, heavy cream, cayenne pepper and pecans to pan. Simmer for about 2 to 3 minutes. Remove from heat and stir in butter until melted.
  9. Season sauce to taste with salt and pepper.

  • 4 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 2 ounces low-fat cream cheese
  • 1 teaspoon Italian herb seasoning

Instructions

  1. Preheat the oven to 300 degrees F. If you have a convection oven, set on convect. Line two large baking sheets with parchment paper.
  2. Separate the egg whites and egg yolks. Place the whites in a stand mixer with a whip attachment. Add the cream of tartar and beat on high until the froth turns into firm meringue peaks. Move to a separate bowl.
  3. Place the cream cheese in the empty stand mixing bowl. Beat on high to soften. Then add the egg yolks one at a time to incorporate. Scrape the bowl and beat until the mixture is completely smooth. Then beat in the Italian seasoning, salt, and garlic powder.
  4. Gently fold the firm meringue into the yolk mixture. Try to deflate the meringue as little as possible, so the mixture is still firm and foamy. Spoon 1/4 cup portions of the foam onto the baking sheets and spread into even 4-inch circles, 3/4 inch high. Make sure to leave space around each circle.
  5. Bake on convect for 15-18 minutes, or in a conventional oven for up to 30 minutes. The bread should be golden on the outside and firm. The center should not jiggle when shaken. Cool for several minutes on the baking sheets, then move and serve!

  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 Tbsp fresh lemon juice

  • 5 drops yellow food coloring (optional)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees. In a mixing bowl whisk together flour, baking powder and salt.
  2. In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter, sugar and lemon zest until pale and fluffy (occasionally scrape down bowl throughout entire mixing process if not using a paddle attachment that constantly scrapes bowl).
  3. Mix in egg then blend in egg yolk. Add lemon juice, lemon extract, vanilla extract and optional yellow food coloring and mix until combined. With mixer set on low speed, slowly add in dry ingredients and mix just until combined.
  4. Pour powdered sugar into a small bowl. Scoop dough out about 1 1/2 Tbsp at a time (25g each) and shape into a ball, then drop in powdered sugar and roll to evenly coat.
  5. Transfer to a parchment paper or Silpat lined baking sheet, repeat with remaining dough and space cookies 2-inches apart on baking sheet. Bake in preheated oven 10 - 13 minutes.
  6. Cool on baking sheet several minutes then transfer to a wire rack to cool.

  • Macerated Strawberries and Cream:
  • 2 cups strawberries , washed and divided
  • 2 tablespoons natural sweetener or sugar of choice
  • 1 - 2 tablespoons Cointreau (adjust to your tastes)
  • 1 1/2 cups reduced fat cooking cream (Philadelphia) or Greek yogurt
  • 2 tablespoons (extra) sugar or sweetener of choice
  • 1 teaspoon vanilla extract
  • Crepes
  • 3 large eggs
  • 2 tablespoons oil/ (or reduced fat butter, melted)
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 1/4 cup skim/low fat or almond milk
  • 1 cup plain; light spelt or all-purpose flour

Instructions

  1. For strawberries. :
  2. Cut the strawberries into quarters. Combine the strawberries into a bowl with the sweetener or sugar and Cointreau, and mix to coat evenly and set aside for 15 minutes. While strawberries are soaking up the liqueur, prepare your crepes
  3. For Crepes :
  4. Option 1: Throw all Crepes ingredients into a Bullet or Blender and blend until batter is lump free and creamy.
  5. Option 2: Whisk eggs, oil/butter, vanilla, sugar and milk until light in colour. Add the flour and whisk again until batter is lump free.
  6. Grease a good quality 8-inch non-stick pan with cooking oil (or a thin layer of butter) and wipe over with a paper towel. Pour ¼ cup of batter per crepe onto the center of pan, while swirling and lifting the pan to evenly coat the base and create a thin layer. Cook until the crepe is set and the edges begin to change golden in colour.
  7. Gently peel the edges away from the pan (I use my fingers but a spatula will do the trick) and flip to cook the underside for a further 20-30 seconds. When cooked through, remove onto a separate plate and repeat with remaining batter.
  8. For Strawberries And Cream :
  9. Once the Crepes are done, combine the cream/yogurt, the (extra) sweetener/sugar, and the vanilla. Chop half of the the macerated strawberries into smaller pieces (optional) and mix through the cream mix until just combined. Spread the Strawberries And Cream mixture onto a quarter of each crepe and fold in half, and then in half again. Stack them; top with remaining macerated strawberries and dust with icing sugar.

  • Pinch of salt and pepper
  • 1 cup grated or zested parmesan cheese
  • 1/2 cup almond flour or panko breadcrumbs*
  • 2 eggs
  • 3 tablespoons olive oil or butter or oil of choice

Instructions

  1. Lay the chicken breasts out on a cutting board and cut in half horizontally. Generously season with Italian seasoning (or seasoning of choice), garlic powder, salt, and pepper; Set aside.
  2. Combine the parmesan cheese and almond flour in a medium shallow bowl. In another bowl, whisk the eggs.
  3. Dip the chicken breasts into the egg mixture then into the parmesan mixture. shake off the excess breading. Repeat until all the chicken cutlets are covered.
  4. Heat oil or butter in a large NON-STICK heavy duty pan. Add chicken cutlets in a single layer and cook for 5-6 minutes on each side, until golden and crispy. Be sure not to flip until the parmesan is golden on the first side or it will slide off. Repeat with remaining chicken cutlets.
